Sweet Potato and Spinach Turkey Meatballs
Ingredients
- 1 medium peeled sweet potato, cut into 3/4-inch chunks (about 2 cups)
- 1 lb. lean ground turkey
- 1 large egg
- 2 cups medium packed fresh spinach, chopped small
- 1 small onion, finely chopped
- 2 large cloves garlic, minced
- 1 tablespoon Italian seasoning or poultry seasoning
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 Tbsp. extra virgin olive oil and 3 Tbsp. for baking sheet
Instructions
1. Microwave sweet potato 4-6 minutes until very soft and fork tender. Allow to cool
2. In large bowl, mash sweet potato. Add turkey, egg, spinach, onion, garlic, herbs, salt, pepper and oil
3. Roll into ¼ cup size balls
4. Brush 2 Tablespoons olive oil on to a baking sheet. Preheat oven to 400°F. Place meatballs 1 inch spaced a part. Brush remaining 1 Tablespoons of oil onto meatballs.
5. Bake until cooked through and slightly golden, about 20 minutes.
