Cauliflower Rice
Ingredients
- 1 Head of Cauliflower
- 2 TBS Olive Oil
- 2 Scallions
- 3-4 Cloves Garlic
- 1/2 Cup Shredded Parmesan/Pecorino Cheese (optional)
- Salt and Pepper
Instructions
1. use shredder blade on the food processor to shred cauliflower chunks into fine-minced pieces, to look like rice
2. line a baking sheet with paper towels, spread cauliflower rice evenly and layer paper towels on top. press to remove excess water
3. while cauliflower is “draining”, slice scallions thinly and mince garlic
4. heat olive oil on medium (be careful your oil does not smoke!) in a large frying pan, and saute scallions and garlic until fragrant
5. add cauliflower into pan and saute 10 minutes until softened, stirring throughout to cook evenly
6. season with salt and pepper, and cheese (if using)
This recipe is almost fail-proof. You can continue to cook cauliflower on medium heat. Because cauliflower contains a lot of water, it will be very difficult to overcook it. Your cauliflower will soften and start to shrink with prolonged cooking, which is OK. Enjoy!
