Spicy Crispy Chickpeas
Ingredients
- 1 15 oz. can no-salt-added chickpeas
- 2 Tbs. olive oil or non-stick spray like Pam
- 1 tsp. paprika
- ¼ tsp. coriander
- ¼ tsp. cumin
- ¼ tsp. chili powder
- ¼ tsp. salt
Instructions
1. Preheat the oven to 450º F and line a baking sheet with parchment paper.
2. Drain, rinse, and blot very dry the chickpeas with paper towels
3. Toss all the ingredients together in a bowl (if using olive oil)
4. Transfer the chickpea mixture to the lined baking sheet, spray with Pam to evenly coat (if not using olive oil) and roast for 25 minutes until golden brown
