Barbecued Chicken Salad

Ingredients

  • 8 oz Chicken breast, w/o skin
  • 1/2 cup bbq Sauce,
  • 2 cup fresh romaine Lettuce, chopped
  • 1 Tomato
  • 1/2 cup Onion, chopped
  • 1/2 cup chopped cucumber
  • 4 tsp olive oil
  • 1/4 cup cider vinegar

Instructions

Preheat oven to 350°F. Place chicken in small baking pan and cover with barbecue sauce. Bake until done, about 20 minutes. Place the lettuce and fresh vegetables in a large salad bowl. Place the chicken on top and sprinkle salad with olive oil and vinegar. Serve immediately. Yield: 4 weight-loss-friendly or 2 standard servings (double the nutritional value).

TIPS:
Marinating and/or the use of (low fat, low calorie) sauces helps to soften protein sources and make them more band-friendly, improving diet tolerance. Stop eating at the first sign of fullness.
