Parmesan-Basil Chicken Salad

Ingredients

  • 2 oz chicken breast, w/o skin
  • 1 celery stalk
  • 1 tbsp mayonnaise, fat free
  • 1 1/2 tsp lemon Juice
  • 2 fresh basil leaves
  • 1/2  fresh garlic cloves
  • 1 tbsp parmesan Cheese, fat free
  • 2 cups romain lettuce, chopped

Instructions

Cut chicken into thin cross-wise strips and place in a small bowl. Wash, trim and finely chop celery. Add to chicken and toss. In a food processor or blender, puree the mayonnaise, lemon juice, basil (chopped), garlic (minced), and Parmesan cheese. Spoon onto the chicken mixture and toss again. Chill until ready to serve. When ready to serve, place on a bed of washed and chopped lettuce. Yield: 1 weight-loss-friendly or standard serving

TIPS:
Make sure to consume the protein first, followed by the vegetables. Chew each bite well, take eraser-sized bites and eat slowly. These best practices will facilitate better diet tolerance.
